What are AGEs (final saccharification products)?

In recent years, “advanced saccharification” has attracted a great deal of attention in the medical community as a factor that adversely affects health and beauty.

Sugar is necessary as a source of energy for the body, but excessive consumption of sugar promotes aging of the body and skin.

AGEs (final glycation products) can be produced after the saccharification reaction results in abnormal binding between proteins and carbohydrates that make up the majority of the human body.

What is saccharification?

Proteins and lipids in the body are linked to saccharides taken from food and drinks through saccharification (Maillard reaction), changing into substances called final glycation products (AGEs) and accumulating in the body.

Increased accumulation of AGEs causes changes in proteins, aging skin, blood vessels, bones and organs, causing various diseases.

Skin dullness and decreased elasticity as a manifestation of aging are mainly caused by browning (= stain / dullness) due to the saccharification reaction of collagen protein in the skin and sclerotic alteration (= wrinkle / sag).

These are called "burned body (skin)".

The saccharification reaction can increase the degree of saccharification due to inappropriate eating habits such as sweets, oils and oxides.

 

Measuring method
